Spencer Gulf King Prawns are wild caught in the clean waters of South Australia and snap frozen at the source for peak freshness. For me, they also come with a bit of history. Some of my earliest memories are crabbing off the jetty at Franklin Harbour while the Spencer Gulf prawn boats pulled in. These days the fleet runs mainly out of Boston Bay near Port Lincoln, but the quality and reputation remain the same.

The Spencer Gulf prawn fishery is one of the best managed fisheries in Australia and is MSC certified, which is widely recognised as a strong benchmark for sustainability. Careful quota systems and seasonal management protect stocks and ensure this fishery remains viable for generations.

King Prawns are naturally sweet, firm and full flavoured. They are frozen at sea shortly after harvest, which locks in freshness and prevents the quality loss that can happen when prawns sit around “fresh” in display cabinets. Because they are sold frozen, you control when they are thawed. Defrost only what you need, when you need it.

These are green (raw) prawns, perfect for the BBQ, garlic butter prawns, prawn pasta, stir fry or simply grilled with olive oil, salt and lemon. Cook them quickly and do not overdo it. When they turn opaque and curl, they are ready.
