Where does this salmon come from? +
It's wild sockeye salmon, harvested in Bristol Bay, Alaska — not farmed. Bristol Bay is the biggest wild sockeye run on the planet and the fishery is managed hard to keep it that way.
It's one of the few things in our range we don't raise ourselves. We bring it in because you can't get wild salmon like it in Australia.
What's in the burgers besides salmon? +
They're made from the wild sockeye and very little else — no colouring, no filler bulking them out. Two burgers to a pack.
How do I cook them? +
Straight from frozen is fine. Hot pan or barbecue, a few minutes a side. Don't overcook them — sockeye is leaner than farmed salmon, so it dries out faster than you'd expect.
Will it arrive frozen? +
We pack and dispatch every order snap-frozen at −17°C with dry ice inside insulated boxes, and the vast majority arrive frozen solid. On longer regional runs the outer portions can occasionally soften a little in transit — this is normal. As long as the meat is still cold to the touch, it's safe to put straight back in your freezer or cook within a day or two. If anything ever arrives warm, get in touch and we'll make it right.
How long does delivery take? +
We dispatch every Wednesday. Metro 5–6 days; regional and WA/TAS 7–10 days. Tracking included on every order.

Yes — free pickup from Wolki Butchery, 317A Urana Rd, Lavington NSW 2641. Select pickup at checkout and we'll let you know when your order is ready.
How is it packaged? +
Every cut is cryovac vacuum-sealed and snap-frozen the day of packing. That locks in nutrients and flavour, and means you can take out exactly what you need and leave the rest in the freezer.
