There's farmed salmon, and then there's this. Wild caught Alaskan Sockeye Salmon, sustainably harvested in prime condition and filleted right here in Australia by Harris Smokehouse — a family operation that's been doing this for over 50 years.

Sockeye is a different fish to the farmed Atlantic salmon you find at the supermarket. It's leaner, deeper in colour, and richer in omega-3s. That deep red colour isn't dye — it's astaxanthin from the wild diet the fish actually lived on. You can see the difference before you even cook it.

The portion is 150g — a solid single serve. It cooks quickly, holds together well, and doesn't have the soft, mushy texture you sometimes get with lower quality fish. Pan fry it skin side down in butter until the skin is crisp, then flip it for a minute or two. Or bake it simply with olive oil, lemon and whatever herbs you have on hand. Either way, it's on the table in under 15 minutes.
