How to use it
Estate-grown in the Grampians
Grampians Olive Co. grow and cold-press their own olives in Victoria's Grampians region — single-estate and pressed soon after harvest, so the oil keeps its fresh, peppery character rather than the flat taste of oil that's sat around.
Their caramelised balsamics are slow-cooked in small batches with real fruit — the kind of honest finishing vinegar that's quietly picked up awards. We stock the range because it's exactly the sort of small-producer food we'd put on our own table.

What's the difference between the oils and the vinegars?
The extra virgin olive oils are for cooking and finishing — drizzling, dressing, marinating, roasting. The caramelised balsamics are sweet-tangy finishing vinegars for salads, roast veg, strawberries, ice cream or cheese. The Shiraz Red Wine Vinegar is the sharp, savoury one: soups, marinades, dressings and pan sauces.
Are the olive oils really extra virgin?
Yes — cold-pressed first-press oil from Grampians Olive Co.'s own estate. The 2025 Signature is a certified-organic early-harvest style with a gentle peppery finish.
How should I store them?
A cool, dark cupboard is all they need — no fridge. Keep oils away from heat and light and use within about a year of opening for the freshest flavour. The balsamics keep well for a long time.
Is the chilli oil very hot?
It's a warm, lively kick rather than blow-your-head-off heat — lovely drizzled over pizza, pasta, eggs or grilled meat.
What do I do with the caramelised balsamic?
Treat it as a finishing drizzle. It works both savoury and sweet: roast veg, tomatoes and cheese, or strawberries, ice cream and soft cheese for dessert.
How does shipping work?
Pantry/shelf-stable goods ship $10 flat-rate nationally, and orders over $100 ship free. Australia Post with tracking, multiple dispatches per week. Afterpay accepted.
Is the truffle oil real extra virgin olive oil?
Yes. Many “truffle oils” use a refined vegetable oil — this one is Grampians Olive Co.’s cold-pressed Australian extra virgin olive oil, gently infused without heat with a white truffle flavour: earthy, musky and garlicky, with a hint of parmesan. A drizzle finishes mushroom risotto, pasta, carpaccio, mash or poached eggs. Note: the infused oils aren’t certified organic.
How do I use the Shiraz Red Wine Vinegar?
It’s made from shiraz wine that’s naturally fermented and aged in oak barrels (6% acidity). Add a splash to soups, marinades, pasta and risotto, whisk it into a vinaigrette, or deglaze the pan after cooking steak for a quick sauce.
