Our pork mince is such a versatile cut of meat, suitable for quick cooking or low simmers. My favourite is to match it with Asian or Italian flavours. This 20 minute meal is a staple in the Wolki household. 5-spice is a mixture of 5 spices, star anise, fennel, Szechuan peppercorns, whole cloves and cinnamon sticks. It is available in most grocery stores, it isn’t “spicy” with heat.

The Recipe
5 Spice Pork
Broth Rice
Caramel Soy
-500g Wolki Farm Pork Mince
-1 cup organic white rice
-120ml GF soy
-1 small organic brown onion
-1 cup water
-1/2 cup coconut sugar
-2 teaspoons grated ginger
-1 cup broth or meat stock
-1/4 teaspoon ground or fresh ginger
-30ml GF soy sauce
-60ml broth or meat stock
-30g raw honey
-1 to 2 teaspoons 5-spice
Method
Soak the rice overnight or the morning of, we highly recommend this step as it helps break down the phytic acid and makes it easier for our guts to digest. Place the rice into a bowl and cover with filtered water, add in a splash of apple cider vinegar. Allow to sit on bench uncovered.
To cook the rice drain and rinse it, then place into a saucepan. Add in the water and broth or meat stock. Bring to the boil and simmer on medium heat for 5-10 minutes. Then turn the heat off and put the lid on to allow it to steam.
Heat a fry pan on medium high heat and add in 1 tablespoon fat, we recommend our pork lard.
Finely dice your onion or use a Thermomix or small food processor. Add this to your pan and lightly sautee.
Add in the pork mince and break it up into little clumps with a wooden spoon. Stir around to start browning the mince.
Add in the ginger and 5-spice, continuing to stir to coat the mince and cook it through. Allow to cook for 5 minutes on high.
Add in the soy, stock and honey. Mix again. Continue to cook until the pork mince is cooked through.
To make the sauce add all the ingredients into a small saucepan. Stirring occasionally bring to the boil and let it boil for 2 minutes.
After 2 minutes turn off the heat, it will thicken once it cools.
To serve place the rice into bowls, top with pork mince and drizzle over the caramel sauce. We like to also add the addition of a fried egg, herbs like coriander or mint, shallots, fresh chilli or chilli sauce.
Notes
-The pork mince will last 5 days in the the fridge and is suitable to freeze
-Add more 5-spice if you want a stronger flavour
-The sauce will keep for weeks in a sealed jar in the fridge, a good excuse to make more and have some for other meals!
