Bee bread, in a jar.

Inside the hive, bees pack fresh pollen with honey and let wild lactic acid bacteria ferment it. Honeyrock does the same thing: fresh pollen, raw honey, and time. Sweet, earthy and a little tangy.

Made the way the bees do it

We love finding small Australian makers who share our way of thinking. Honeyrock take fresh bee pollen from Western Australian forests and ferment it in raw Victorian honey, slowly, using the pollen's own wild cultures.

Most commercial pollen is dried at high heat to make it last. Honeyrock skip the drying and preserve it by fermentation instead, closely tracked over 3 to 4 weeks. It sits right alongside our own raw honey in the pantry.

FAQs

What is Pollen Honey?

Fresh bee pollen slowly fermented in raw honey. It's inspired by 'bee bread', the fermented pollen and honey mix bees store in the hive.

What does it taste like?

Sweet and earthy, with a slight tang from the fermentation. It's less floral than pollen on its own and more complex than raw honey. The ferment mellows pollen's usual bitterness.

How do I use it?

A spoonful on its own, stirred into yoghurt, or spread on sourdough toast. A teaspoon a day is a common starting point.

Is it safe if I have allergies?

Contains bee pollen, which can cause severe allergic reactions in some people. If you've never had bee pollen before, start with a small amount and wait 24 hours before having more. Talk to your doctor first if you have known allergies to pollen or bee products.

Can kids have it?

Honey isn't recommended for babies under 12 months. For older children, start with a small amount because of the bee pollen.

How should I store it, and how long does it last?

Keep it in a cool, dry place out of direct sunlight. No fridge needed. Thanks to the fermentation and the raw honey it won't spoil, but flavour, texture and freshness slowly fade, so it's best eaten within 12 months of opening.

Who makes it?

Honeyrock, a small Australian producer. We stock it because it fits the way we eat: whole, raw and minimally processed.

How does shipping work?

Pantry and shelf-stable goods ship for $10 flat-rate nationally, and orders over $100 ship free. Australia Post with tracking. Afterpay accepted.

Can you send it to WA, Tasmania or the NT?

Unfortunately not. State biosecurity rules stop bee pollen and unfiltered honey being sent into Western Australia, Tasmania, the Northern Territory and Kangaroo Island. Everything else in the pantry still ships there as normal.
