For cooking that honours flavour, tradition, and wholesome ingredients, Grass-Fed Lamb Tallow offers a clean, pale, shelf-stable fat with a character all of its own. Rendered from pasture-raised lamb on Wolki Farm, this tallow is naturally rich in fat-soluble vitamins A, D, E, and K, along with conjugated linoleic acid (CLA) — the hallmarks of an animal raised on good pasture and nothing else. Slightly more distinctive in flavour than beef tallow, it's subtle enough for everyday cooking and interesting enough to make a roast potato genuinely worth talking about.
Use it for high-heat roasting, confit, sautéing, basting, or seasoning cast iron. Fat carries what the animal experienced. Ours experienced open grass, clean air, and room to move.
