How to cook this cut

Thaw in the fridge, slice, refreeze the rest.

1. Thaw in the fridge (never on the bench). A whole primal takes 24–48 hours. Sit it on a tray to catch any drips.

2. Slice while it's still very cold. Slightly firm meat is much easier to cut neatly. Trim any silver skin, then slice across the grain into ~2.5cm steaks with a long sharp knife.

3. Wrap and refreeze within 1–2 days. Vacuum-seal or wrap tightly in pairs, label and refreeze. Meat thawed in the fridge and kept cold is safe to refreeze. Don't refreeze meat thawed on the bench, in water or in the microwave.

Or roast it whole: season well, sear all over, then roast at 160°C to 54–56°C internal for medium-rare. Rest 15 minutes before carving.

How the weights work

Each primal is a natural cut, so weights vary. You pay one fixed price and we guarantee the minimum weight shown. Most pieces come in heavier:

Whole Scotch Fillet (lip on): at least 4kg (average about 4.4kg)

Whole Porterhouse (striploin): at least 3.2kg (average about 3.5kg)

Whole Rump (centre cut): at least 2.6kg (average about 2.9kg)

Pre-order, pick-up and delivery

Pre-orders close Sunday 25th October at midnight. ETA at the farm is Friday 6th November, depending on freight. Pick up from the Wolki Farm shop, 317a Urana Road, Lavington, or choose BeCool cold delivery and we'll ship it Wednesday 11th November. Anything else in the same order is held and shipped together.

Will it arrive frozen? +

We pack and dispatch every order snap-frozen at −17°C with dry ice inside insulated boxes, and the vast majority arrive frozen solid. On longer regional runs the outer portions can occasionally soften a little in transit — this is normal. As long as the meat is still cold to the touch, it's safe to put straight back in your freezer or cook within a day or two. If anything ever arrives warm, get in touch and we'll make it right.

How long does delivery take? +

We dispatch every Wednesday. Metro 5–6 days; regional and WA/TAS 7–10 days. Tracking included on every order.

Can I pick up instead of shipping? +

Yes — free pickup from Wolki Butchery, 317A Urana Rd, Lavington NSW 2641. Select pickup at checkout and we'll let you know when your order is ready.

How is it packaged? +

Every cut is cryovac vacuum-sealed and snap-frozen the day of packing. That locks in nutrients and flavour, and means you can take out exactly what you need and leave the rest in the freezer.
