How to cook this cut
Slow roast, braise, curry. Marinate & sear chops.

Mutton is bigger, deeper and fattier than lamb. Treat it like a slow-cook ingredient first, a quick-cook one second.

Slow & low — leg roasts, shanks and chump chops braise beautifully at 140°C for 3–4 hours. Curries, tagines and stews are mutton's natural home.

Chops & cutlets — a 24-hour buttermilk or yoghurt marinade tames the strong flavour and tenderises. Hot sear, ~3 minutes per side, rest 5 min.

Don't trim the fat — render the back-fat into mutton dripping for the best roast potatoes you'll ever eat.

About this cut

Where it comes from

Mutton is the meat of a sheep over two years old. Most Australian supermarkets only sell lamb, but mutton is what most of the world's great sheep-meat traditions are built on — curries, slow roasts, mechoui, navarin.

These come from the same regenerative pastures in Woomargama, NSW, that raise our lamb. Bigger animals, fatter cuts, stronger flavour. Limited availability — when the sheep are ready, they're ready.

Half mutton (~17kg) includes:

  • 8 × BBQ Chops
  • 8 × Cutlets
  • 8 × Loin Chops
  • 4 × Chump Chops
  • 2 × Half Leg
  • 1 × Shank

Whole mutton = double the above (~34kg).

Please note that weights of animals do vary. If a half we have processed is weighing under 17kg we will top it up with Lamb Mince and Lamb Sausages to make weight.

Will it arrive frozen? +

We pack and dispatch every order snap-frozen at −17°C with dry ice inside insulated boxes, and the vast majority arrive frozen solid. On longer regional runs the outer portions can occasionally soften a little in transit — this is normal. As long as the meat is still cold to the touch, it's safe to put straight back in your freezer or cook within a day or two. If anything ever arrives warm, get in touch and we'll make it right.

How long does delivery take? +

We dispatch every Wednesday. Metro 5–6 days; regional and WA/TAS 7–10 days. Tracking included on every order.

How is it packaged? +

Every cut is cryovac vacuum-sealed and snap-frozen the day of packing. That locks in nutrients and flavour, and means you can take out exactly what you need and leave the rest in the freezer.
