When a dairy cow's milking days end, she's usually reduced to burger patties and pet food. We think that's a waste of an animal that's eaten premium feed her whole life. Instead, we take healthy retired Jerseys from the Kiewa Valley, give them months on pasture to fatten and relax, then dry-age the carcasses for up to a month. The flavour profile is deep, dark, complex and unmistakably mature — the meat you remember from a great restaurant.

What is dairy beef — won't it be tough? +
That's the misconception. The reason most retired-dairy beef ends up as burger patties and pet food is because no one bothers to finish them properly. We take healthy retired dairy cows from the Kiewa Valley, give them months on pasture to fatten up (they typically gain ~80kg and grow a glorious golden fat covering), then dry-age the carcasses for up to a month. The result is rich, mature, marbled beef — closer to a chef's special than supermarket steak. We call it the modern-day Wagyu.
What does “double-aged” mean? +
Aged twice. First on the hoof — the cows spend months retiring on pasture, putting on age, fat and depth of flavour. Then on the hook — the carcasses dry-age in our cool room for up to a month, intensifying the flavour and tenderising the meat. That's the double in double-aged.
What cuts will I get? +
A balanced whole-animal selection: roughly 20% prime cuts (dry-aged porterhouse, eye fillet, scotch, rump), 20% roasts (bolar blade, brisket, osso buco), 20% secondary cuts (chuck, skirt, oyster blade), 20% mince and 20% sausages. We curate each box from what's available at harvest so your meals stay varied.
Will it arrive frozen? +
We pack and dispatch every box snap-frozen at −17°C with dry ice inside insulated boxes, and the vast majority arrive frozen solid. On longer regional runs the outer portions can occasionally soften a little in transit — this is normal and nothing to worry about. As long as the meat is still cold to the touch, it's completely safe to put straight back in your freezer or cook within a day or two, in line with the NSW Food Authority's red-meat handling guidance. If anything ever arrives warm or you're not happy, get in touch and we'll make it right.
How long does delivery take? +
We dispatch every Wednesday. Metro 5–6 days; regional and WA/TAS 7–10 days. Tracking is included. Use the postcode checker above to confirm we service your area.
Can I pause or cancel a subscription? +
Anytime, from your account. There's no minimum commitment, no fees — skip a delivery, swap your box size, or cancel outright whenever you like.
Is your meat Halal or Kosher? +
No — our meat is neither Halal nor Kosher. Our cattle are processed at government-inspected abattoirs just over the river in northern Victoria, and are not subject to religious slaughter.
Can I pick up instead of shipping? +

Here at Wolki Farm, we believe all animals should be respected – in life and death. So we eat nose-to-tail and use processing methods that optimise meat to its highest possible value.
We take the carcasses and dry age them for as long as they need to relax…typically up to a month. Hence the term double aged; on the hoof, and the hook.

Patience in the pasture results in prime protein
Magic happens when a dairy cow retires in a grassy meadow; they get happy, which shows in their meat. First, their slender bodies fill out; we generally see them gain an average of 80kg. Then, they grow out the most glorious golden fat covering.
Because dairy cows are significantly older than typical 'beef' cattle at processing, they produce an 'old meat' profile; deep, dark, and delicious.
